    Cook the Aromatics

    Heat the 2 tbsp of olive oil in a pan over medium heat. Sauté the chopped onion until completely softened and translucent. Step 2: Add the crushed garlic, ground coriander, black pepper, nutmeg, and allspice to the pan. Cook for another 1–2 minutes, stirring continuously, to toast the spices and release their oils. Remove from heat and let the mixture cool completely.

    Mix and Chill

    In a large bowl, combine the 500g of beef mince, breadcrumbs, 1 egg, and the cooled onion-spice mixture. Mix thoroughly using your hands until everything is uniformly combined.

Letting the spiced onion mixture cool completely before mixing it into the raw mince is critical. If it’s hot, it will melt the fat in the meat prematurely, which leads to a dense, tough filling rather than a juicy one.
