Method

    Brew Rooibos & Prepare Batter

    In a measuring jug, combine 125 g boiling water and 125 g milk, then add 3 rooibos tea bags. Steep for 5–10 minutes to infuse, then squeeze out the tea bags and set the liquid aside to cool slightly.

    In a large bowl, cream together 125 g softened butter and 200 g caster sugar using an electric mixer until pale and fluffy.

    Beat in 3 large eggs, one at a time, mixing well after each addition.
