    Using a sharp paring knife, shallowly score the skin of each cleaned madumbi all the way around the circumference.

    Place the scored madumbis directly into the air fryer basket in a single layer. Air fry at 190°C for 30 minutes.

    Using tongs, transfer the hot madumbis straight from the air fryer basket into the bowl of ice-cold water, letting them submerge for 5 minutes.

Scoring the skin before cooking creates a release line so the thermal shock can separate the skin from the starchy layer underneath effortlessly.
