Method

    Sear the Cabbage

    Heat 1 tbsp of coconut oil in a skillet over medium-high heat. Fry the quartered cabbage wedges until golden brown on all sides, then transfer them into an oven-safe baking dish.

    Make the Spiced Cream Sauce

    In the same pan, sauté the 3 minced garlic cloves, 1 tsp garam masala, 1 tsp curry powder, 1 tsp paprika, ½ tsp turmeric, and ½ tsp cumin for 1 minute until fragrant.

    Pour in 250 ml of coconut cream (or fresh cream), season with salt and pepper to taste, and simmer gently for 2–3 minutes. Stir in 50g of grated Parmesan until melted into a rich sauce.
