These handheld rice paper wraps feature tender seasoned sushi rice, crisp cucumber, creamy avocado, and fresh tuna and salmon sashimi tucked inside a sheet of nori. Wrapped in delicate rice paper and crusted with toasted sesame seeds, each wrap is pan-seared until crackling and golden on the outside while keeping the fresh sashimi soft and cool on the inside.

Method

    Cook and Season Rice

    Cook the sushi rice according to package instructions. While warm, gently fold in 2 tbsp rice vinegar, 1 tbsp sugar, and ¾ tsp salt until dissolved. Allow the rice to cool slightly.

    Layer and Roll

    Dip 1 rice paper sheet briefly in warm water until just pliable, then lay it flat on a clean board. Place a sheet of nori on top, followed by an even layer of seasoned sushi rice.

    Layer with cucumber strips, avocado slices, tuna and salmon sashimi slices, and a touch of wasabi.

Don't soak the rice paper for too long in water—a quick 5-second dip is enough as it will continue to soften as you assemble. Pan-toasting in sesame oil gives a fantastic nutty aroma while turning the delicate rice paper shell ultra-crispy.
