Instant Mango Pickle
A quick, tangy South African-Indian green mango pickle tossed with warm garlic and mustard seed tempering.
Craving something tangy, spicy, and full of flavour? This Instant Mango Pickle is one of my go-to quick fixes—ready in minutes and made with just a handful of simple ingredients! Crisp matchsticks of sour raw green mango are tossed with vibrant spices and finished with a hot garlic-mustard tempering (tadka) for the ultimate bright, punchy condiment.

Season Mango Matchsticks
Place 3 raw mangoes sliced into thin matchsticks into a large heat-proof bowl.

Add ½ tbsp powdered sugar, ½ tbsp red chilli powder, ¼ tbsp turmeric, and salt to taste over the mangoes, tossing thoroughly to coat evenly.

Temper & Combine
Heat 2 tbsp oil in a small pan over medium heat. Add 1 tsp mustard seeds and let them sizzle and pop for 10–15 seconds.
