Method

    Char Vegetables & Caramelise Litchis

    Heat 1 to 2 tbsp olive oil in a heavy-based skillet or pan over high heat until shimmering hot.

    Add 1 red onion cut into thick wedges and 1 green bell pepper cut into large pieces, cooking for 2–3 minutes until lightly charred around the edges but still crisp.

    Add 1 cup peeled and deseeded fresh litchis to the pan, cooking for 1–2 minutes until they turn lightly caramelised.
