    Make & Cook the Pudding

    In a small bowl, whisk together 1 tbsp apricot jam, 1 tbsp brown sugar, 2 tbsp cream or milk, 1 egg yolk, 3 tbsp flour, ¼ tsp baking powder, and a pinch of salt until completely smooth.

    Pour batter into a greased ramekin and cook in an air fryer at 160°C for 10–12 minutes, or cook in the microwave on high for 1.5 to 2 minutes.

    Soak the Pudding

    Mix 1 tbsp apricot jam and 2 tbsp cream together in a small microwave-safe bowl and warm briefly for 15 seconds.

Prick the hot malva pudding all over with a skewer or fork the second it comes out of the air fryer! Pouring the warm syrup over a piping hot sponge ensures every bit gets soaked through to the center for that iconic spongy, sticky texture.
