Vetkoek with Curried Mince

Golden South African fried bread stuffed with warmly spiced mince.

Golden, fluffy vetkoek filled with a rich, gently spiced curried mince — a South African favourite that's just as good served simply with jam and grated cheese. The yeast dough is left to rise until light and airy, then fried until crisp and golden outside while staying soft inside. Fill them generously with the savoury mince for a proper comforting meal.

Ivana Sanshia’s note

Vetkoek: Literally meaning “fat cake” in Afrikaans, vetkoek is a South African fried yeast bread. It can be served with savoury fillings such as curried mince or with simpler sweet and savoury accompaniments.

Cake flour: For this South African recipe, cake flour refers to the everyday South African flour traditionally used for this type of dough. Outside South Africa, plain/all-purpose flour is the practical substitute.

For a really good curried-mince vetkoek, don't leave the filling too saucy. Let the tomatoes cook down so the mince is rich and juicy but thick enough to stay inside the vetkoek rather than soaking straight through it.
