Method

    Build the Base

    Heat the oil in a pan over medium heat and fry the sliced onions until soft and lightly golden for about 5 minutes.

    Add the (1 tsp) ground dhania, (1 tbsp) Kashmiri masala, and salt to taste. Stir the spices thoroughly into the onions and let them cook briefly to release their aromas.

This is generally a dry braised curry, but if you prefer it a bit more saucy, simply add a splash of warm water right when you toss in the mushrooms to create a light gravy.
