Simple Carrot Salad

Quick-Pickle the Aromatics
In a small bowl, combine 3 tbsp white vinegar and 1 tbsp sugar until the sugar dissolves. Add the thinly sliced onion and chopped green chilli, then let soak for 30 minutes to quick-pickle and take off the raw bite.

Grate the carrots and chop the cucumber.
