Braised Cabbage With Potatoes and Peas
Slow-cooked until soft and caramelised
A simple, flavourful veggie dish made with everyday ingredients and warm, comforting spices. The cabbage cooks down slowly until it is tender and slightly caramelised, with soft potatoes underneath and a handful of peas stirred through right at the end. Wholesome, healthy, and perfect with roti or rice.

Heat the oil and add the onion, mustard seeds, and fennel seeds (plus cardamom pods, if using). Sauté until lightly golden.

Don't disturb the cabbage too often while it cooks! Giving it a couple of minutes to sit against the bottom of the pot creates those golden, caramelised edges that give this simple dish its rich, nutty flavour.
